Thursday's Eats

Good evening. Ya'll come on in for a hot cup of coffee and take a load off your feet. The coffee is fresh made and the company can't be beat. Come on in the house.

I wanted to share a recipe with ya'll today that we had for dinner (lunch). We had chicken strips, peas, potatoes in milk gravy, hot biscuits (homemade) and stewed apples. It's the stewed apple recipe I want to share. I had several, small, Fuji apples which needed to be used and we like stewed apples but I wanted to do something different and this is what I concocted. Roy said they were good, especially with the hot biscuits.


Stewed Apples



4 - 5 tart apples, peeled, cored and sliced. Don't make the slices too thin or they will be mushy

1 1/2 cups cranberry juice or cranapple or I used cranenergy

1/3 cup light brown sugar

2 tablespoons plain flour

1/4 teaspoon salt

1/2 tsp. cinnamon

1/4 tsp of nutmeg or just a good sprinkle

1 tablespoon butter


Peel, core and slice apples and place in medium saucepan. Combine the cranberry juice, brown sugar, flour, salt, cinnamon and nutmeg in small bowl. Whisk until mixed well and pour over the apples. Stir gently and simmer over low heat for about 30 minutes stirring occasionally. When apples are tender, remove from heat and add the butter which I cut in small pieces. Stir gently until butter melts. Serve as a side dish or dessert. Ice cream or whipped cream would be good on top just before serving.


It is really good and you could use apple juice instead of the cranberry juice and if you don't like nutmeg leave it out. I thought about adding dried cranberries or golden raisins also. It could be modified in several ways depending on what is in the pantry.
