Wednesday's Eats

Hi ya'll. Just had to share a new recipe with you. We had it for lunch and it is good!

New Orleans Pork Chops

4-6 pork chops or I used deer chops

1 cup uncooked rice - I used wild rice

2 medium onions, chopped

2 1/2 cups boiling water

1/2 cup red wine or 3 cups of boiling water

1/4 cup ketchup

1 Tbsp Worcestershire sauce

Powdered garlic

Salt and pepper to taste

Salt, pepper and sprinkle garlic powder on chops. Heat a large skillet or dutch oven with about 2 tablespoons of olive oil. Brown the chops lightly, remove from pan and saute the onions in the drippings. Place chops back in skillet with onions and add the rice on top. Mix the boiling water, ketchup and Worcestershire sauce and pour over chops and rice. Season with additional salt and pepper to taste. Bring to a boil, reduce heat, cover and simmer about 1 hour or until chops are tender and rice is cooked.

I served it with tossed salad, peas and cornbread. It is quick, easy will taste good the next day. Haven't tried freezing it, but I think it would good.

Happy eating
