Peachy Waffles


Good evening and come on into the Net Porch and have a seat. I have cold coke ready and iced tea if you prefer but you will need something for it is hot and humid. Welcome to South Georgia in July and I love it. This is my kind to weather for I stay in house during the hot part of the day and go out early in the morning and late in the afternoon and I wouldn't swap it for anywhere else except the beach. In fact, I need a "beach fix" really soon.

We had waffles for breakfast this morning and this time I remembered to spray the waffle iron with non-stick spray. It is supposed to have a non-stick surface but if you don't spray it the waffles will stick and you cannot get them out. I found that out the last time I tried to have waffles.

I made Peachy Waffles this morning for I had some fresh peaches I needed to use and if you add peaches to anything it makes it taste better. I peeled and cut up the peaches in small chunks for I wanted to bite into a peach chunk while I was eating it. They turned out so well, I thought you might like to try it also so I included the recipe for you to try. Fresh blueberries could also be used instead of the peaches or put some of both for these two fruits compliment each other well.

PEACHY WAFFLES

Ingredients:
2 c. packaged biscuit mix
1 tsp. Cinnamon
¼ tsp. Nutmeg
2 tbsp. sugar
1 egg
1 2/3 c. milk
2 tbsp. salad oil
1 c. chopped peaches

Directions:
Place the biscuit mix, cinnamon, nutmeg and sugar in bowl and mix. In smaller bowl, mix egg, milk and oil and add to dry ingredients. Stir together then add the chopped peaches. I roughly chop the peaches not mince them. Bake 3/4 cup batter at a time in a hot waffle iron until brown.

When mixing the wet ingredients with the dry, don't over mix or they will tough. I also took one and put it into a bowl while it was warm to see if I could make a waffle bowl. Scoops of ice cream topped with peaches or blueberries would be great in this bowl or whatever you wanted to put in it. Make a double recipe of the waffles and freeze some for later. Thaw them and pop them into the toaster for a quick breakfast or a snack. These are good enough to eat like a cookie.

Let Their Be Sight

Ya'll come on in the house and sit a spell for it has been a long time since I have written anything but I have had cataract surgery and didn't feel like writing. My sight was also fuzzy but getting better every day and not wearing glasses all the time is wonderful. I began wearing glasses when I was 15 and they were the first things I reached for in the morning and the last thing I pulled off at night for without them I was about helpless. I am now having only to wear the little reading glasses for small print and that is fine for I can do everything else without them.

That surgery has come a long way, Baby, in the last 20 years for it is really simple. Not only did he remove the cataracts but implanted new lens so I can see well. You used to spend days in the hospital and now you go in and out of outpatient surgery in a matter of hours. It is amazing what they can do in a few hours for you go from seeing dimly to seeing brightly. The colors are wonderful and everthing is so bright. Having the film of cataracts removed has given me fresh sight.

There are a couple of downsides to this however, for I can see all the dust, spiderwebs, dirty baseboards, and all the things I needed to clean before and hadn't done it. So, now I am cleaning and cleaning trying to make everything shiny and clean like my sight. I tried pulling the drapes and dimming the lights but the dust is still there so I will just have to clean it.

The other sight I had to get used to was seeing the wrinkles and age spots I had not been able to see. That was quite a shock for I wanted to ask who was the old woman in the mirror? Low and behold it was me and I grabbed the age spot fading cream and began to slather on the wrinkle cream. Haven't noticed it doing much good but I guess I will be continuing to try although it is about impossible to erase the signs of time without a little nip and tuck here and there and in my case everywhere.

I look forward to a total healing and I am so thankful this surgery is available. I have been doing a little cooking and have one recipe to share with you. After watching Rachel Ray use her waffle iron to cook most everything I decided to try some of my own ideas. I had a box of blueberry muffin mix and I like to add orange to the blueberry flavor and so I made waffles from the muffin mix and they are really good. I know you will like them also so let me know what you think.

Blueberry Orange Waffles

1 18.25 oz. box blueberry muffin mix
1 cup orange juice - fresh squeezed if you have it
3 Tbsp. oil
1 egg
1 tsp. orange flavoring
zest of one orange

Mix the orange juice, oil, and egg in small bowl before adding to the muffin mix. Stir only until mixed and add the flavoring the the orange zest and mix lightly. Don't overmix or they will be tough. Make the waffles using a pre-heated waffle iron and serve with blueberry syrup and butter.

This makes a softer waffle but they are really good. I used a Paula Deen muffin mix but any mix of this size will be good. I also found some really good blueberry syrup at Big Lots. it is made over at Thomasville, GA and is called Mama's Choice and is almost pure blueberry juice. Not sure I can afford it anywhere but Big Lots but it is excellent. We plan to go over to Thomasville and see if we can visit the plant where they make it. They use blueberries from the area and also make several other items. I have included a link for you.

I thought that these would also be good while they are warm and soft to mold them to a dessert dish and fill with fruit and top with ice cream. You could also keep some in the freezer and pop them in the toaster for a quick breakfast.

Spring is Arriving

Good evening and come on into the 'Net Porch and sit a spell. I am sorry it has been so long since I posted but have not been feeling really well this week but as our Southern Lady Mama taught us, we don't talk about our maladies. Just know I have been a little under the weather this week and haven't done enough cooking to share anything special except a waffle recipe.

It is very easy and quick. To your favorite waffle recipe, and I use the one on the Bisquick box, add about 1/2 chopped apple, tsp. of cinnamon and tsp. of apple pie spice. Cook in the waffle iron as usual and I served it with warm strawberries I had frozen last spring. I take a quart of frozen strawberries and microwave them with a little sugar for about 4 minutes. I like them just a little warm.

You can also serve them with your favorite syrup or preserves. Make a double recipe and freeze some to pop on the toaster later for a quick breakfast or snack. The chopped apple adds an extra flavor with the added bonus of some fruit for the day.

As you can tell from the picture above it is plowing time in South Georgia. Standing in fresh plowed ground reminds me of Daddy and how he loved to plow, plant, grow vegetables and share them with others. Mama would put as much as we could eat in canning jars or freeze it for us to enjoy the rest of the year. There was always plenty of good food at our home which we had raised and preserved. It was hard work but worth it.

Roy and I continued to do this until a couple of years ago and we found that we didn't really need a big garden but have been planting tomatoes and a few other plants in containers or by the fence but this year we decided to try a couple of raised beds which we bought at Sams Club.Roy got them put together this week and filled with dirt today. We bordered our patio with them so we can keep the plants watered and we can pick our fresh veggies close by. We bought and put together 2 sets and this is one of them.


Roy put some good topsoil in the bottom and then potting soil on the top. They are 7ft x 4 ft and 16 inches deep but the roots can go deeper for there are sitting on top of dirt.

I plan to plant some broccoli plants, turnips, mustard and some herbs in one of the beds this week. These will be fine in the cooler weather and then soon it will be time for the tomatoes, peppers, squash and cucumbers. As it grows, I will share pictures with you and I am looking forward to seeing how much we can grow in these 2 beds.

Thought I would share some of the signs of springs in our yard. This is a branch of flowers on our Bradford pear tree.



These are our 2 Bradford pear trees which we enjoy the flowers each spring and the beautiful red leaves in the fall. We plan to plant some more this year.

One of the hyacinths which grows by our pump house which were planted before we bought the house 18 years ago. They still come up each spring and I love to bring them in the house for they smell so good.



My daffodils are slowly coming back up but when we landscaped this fall some of them were lost.


Camellias are a little late this year and not as healthy due to the freezing weather this winter. Ours was a little more harsh than usual but I have a few pretty blooms. My plants are over 20 years old but camellias will live forever if you take care of them.


Though it is and invasive weed, the dandelion is pretty to me. Because this one is growing out next to the field I will leave it for a while and enjoy the beauty of the blooms. It is one of our first signs of spring.
We still have not seen any robins which will come in flocks later on but the redbirds are all over the yard and are so pretty. One morning recently I counted over 20 in the back yard all chirping loudly and busy hunting worms and insects. I tried to get pictures but when I opened the door they flew away.
I hope you enjoy the pictures and try putting the chopped apple in your waffles and cinnamon makes everything taste better.

Good evening and come on the house for it is below freezing outside and this is SOUTH GEORGIA and 4:00 in the afternoon. It is not supposed to be this cold down here and I can't get warm. We have the central heat on, an electric space heater and a fire in the fireplace and I just put on a thermal lined sweatshirt. When I get cold it is hard for me to get warm.

We enjoy the fireplace not only for the beauty but for the warmth when sitting on the hearth. I was sitting on it earlier this afternoon, resting my head on my hands and went to sleep. Thank goodness I woke up falling forward and not backwards. Being full, warm and relaxed will lead to a nap every time but I think the bed or lounge chair would be safer.

I tried a new way of cooking waffles this morning for brunch. Now for those of you who don't know what a brunch might be, it is "breakfastlunch" shortened to brunch. We ate breakfast about 12:30 PM for it took me that long to thaw out so I could move. Cold weather, old age and creaking bones lead to a "snap, crackle, pop" experience and it takes a while to get going in the mornings. Since cold cereal didn't sound too good I got out the waffle maker and the waffle mix and began to concoct. I will not leave a recipe on the back of a box alone but have to "fix" it and most times it turns out delicious. If it doesn't I'll never tell :)

I was using Aunt Jemima Whole Wheat Blend pancake/waffle mix and doubled the recipe. Freezing the extra waffles makes for a quick and easy breakfast next week. You can freeze 2 or more per plastic bag, pop them in the freezer and all you have to do is heat them in the microwave for a good, hot breakfast.

CINNAMON PECAN WAFFLES


Spray waffle iron with cooking spray and preheat.

1 1/4 cups Aunt Jemima pancake mix (you can also use the white flour mix)
1/2 tsp. cinnamon
1 1/4 cups milk
1 egg
3 tablespoons oil
1 tsp. vanilla
1/2 cup finely chopped pecans
cinnamon sugar (I make mine with 1 part cinnamon to 2 parts sugar- about. I really don't measure but just dump until it looks like I want it.

Combine the milk, egg , vanilla and oil in large cup. Combine the mix and cinnamon and add the liquids and stir until large lumps disappear. If you stir it until all the lumps are gone you will have tough waffles. Stir in the chopped pecans. Let batter rest about 5 minutes. Pour desired amount into waffle iron and sprinkle with cinnamon sugar. I sprinkle heavily and bake until steaming stops.

I served with homemade syrup and link sausages and fresh citrus fruit salad. The sprinkling of cinnamon sugar on the top before baking makes a little crust and is delicious.

Another way to serve them would be to open a can of apple pie filling, heat and pour over the pancake. This would make a good dessert and if you added a scoop of ice cream before the warm apple filling it would be scrumptious. Think I will try that this week.

Saturday's Recipes & Tips

Good morning, ya'll. Come on in and have a cold coke. It is too hot for coffee, which I seldom say but after hanging up clothes, I am in a sweat. I thought I would share a new waffle recipe and a good pimento cheese idea with you this morning and some tips and best buys.
Hint of Orange Waffles
(Using pancake mix)

2 cups pancake mix (I used a whole wheat blend)
1 1/4 cups milk
1/4 cup orange juice
2 tsp. orange zest
2 TBSP. vegetable oil
1 tsp. Vanilla flavoring
Makes 4 waffles but can be doubled

Combine milk, orange juice, orange zest, oil,vanilla and mix well. I use a two cup measuring cup for this. Pour over pancake mix and mix until slightly lumpy. Do not overmix or they will be tough. Pour batter into preheated waffle iron and cook until golden brown - about 5 minutes.
I use an icecream scoop to measure and my waffle iron needs about 3 scoops. If you will spread the batter over the iron and let cook just a minute, it will not overflow the waffle iron when you close the top.

If you don't like whole wheat mixes, you can use a mix of choice. I top them with cane syrup or chunky applesauce. I usually use applesauce to decrease the calorie count.
IF you have leftovers, freeze and pop in the toaster to heat for a quick breakfast. I like to toast them and put a piece of ham and applesauce on half, fold over and have a breakfast sandwhich. This would be a healthy and quick breakfast for kids for they could eat it on the way to school.

For a quick dessert, toast the waffle, top with fresh slices of peaches and fresh blueberries and whipped topping. This is really good.

Almost Homemade Pimento Cheese

1 large carton pimento cheese

1 package of cream cheese - large - room temperature

1/2 tsp. onion powder

1/4 tsp. garlic powder

Beat the pimento cheese and cream cheese until well blended, add seasonings, mix well and enjoy.

Now for a few tips and this week's best buys.

If you live in an area where you cannot have a clothes line (poor you), I found this folding clothes rack at Lowes. You can put it on the patio, deck or laundry room and dry your clothes. Saves on using the dryer and saves knits from shrinking. I like to hang my knits on racks to dry and then when dry place them in the dryer for just a few minutes to fluff. If the rack is in the sun, hang them inside out and they won't fade. This is my rack on the patio. I also use it when ironing and sewing. It is a good alternative to a clothes line.

The yellow dress is a knit casual lounging dress I found at Goodwill for $3.00. I plan to use it at the beach later this summer but it makes a great dress for casual lounging. In fact, it had never been worn, still had the tag.


I have been in a piddlin' mood this week and had these 2 wooden letters I had bought several years ago. They were in a clearance basket at Michaels and are initials in our family. I painted them with acrylic craft paints, and on the B I decoupaged some pictures cut from a greeting card and hot glued buttons for added interest. The R was painted and I glued buttons and some beads to decorate. The B had a hanger, but I attached a ribbon to the top of the R with thumbtacks on the back for a hanger. They turned out pretty well, I thought and our daughter and granddaughter will get a surprise this week.

I found these shoes this week at Big Lots for 5 dollars a pair. Needless to say because I am a shoeaholic, I bought them.
These are Sketchers and so comfortable and enough dressy to look good with most anything. There was a problem with my feet making a slurping sound when I walked due to the plastic soles. To solve this problem, I bought the thinnest, cheapest cloth insoles I could find, inserted them and no slurping or squishing. They are very light and comfortable.

These crocs are made by Capelli and are most comfortable. I like them because of the holes in the top. I like a little air to my feet.


This is another piddlin' project. I took 2 flower pots, turned the bottom one upside down and placed the other on top and hot glued them together. I spray painted them with the spray paint which sticks to plastic and ta dah a new planter with height. By the way, the plants are wandering jew and another vine in our yard which I snipped off, put in a glass jar and placed in the pot. A quick and easy, free plant.
