Monday's Recipe

Good evening. Come on in and try my new cupcake recipe. It is so good and I thought you would like to make them also. Our granddaughter says they are delicious so if it passes a grandchild's taste buds, it is worth sharing.

Chocolate Cupcakes with Chocolate, Cream Cheese Frosting

1 Box yellow cake mix

1/3 cup of cocoa powder

2 Tbsp. instant mocha coffee mix

Mix the cake mix following the instructions on mix box with the addition of the cocoa and coffee mix. Fill 24 paper cupcake cups about 2/3 fulls. Bake as directed on the box.
Cool completely before frosting.

Chocolate, Cream Cheese Frosting

1 can chocolate frosting
1 8 oz. package cream cheese

Place frosting and softened cream cheese in bowl and beat with electric mixer until well blended and fluffy.
Frost the cupcakes and top with your choice of toppings - chopped pecans, toasted coconut, sprinkles, or other toppings you enjoy. The frosting will be soft and can be piped if you like. I used a plastic bag filled with the frosting and a corner cut from the bottom.

They really are good and you can leave out the mocha instant coffee or substitute you favorite flavor. Using the yellow cake mix and adding the cocoa makes a light chocolate cake but not to "chocolaty."

It does make a mess when eating for the frosting remains soft but oh so good. Just eat, lick your fingers and enjoy. This would be a good recipe to make with children for it is so easy.
