Crockpot Stewed Apples and Apple Crumble

CROCK POT STEWED APPLES/APPLESAUCE

6 cups peeled sliced apples (whatever kind you have)
1 tsp. Cinnamon
1/2 tsp. nutmeg
1/8 tsp. or 2 pinches allspice
1 Tbsp. lemon juice
1 tsp. lemon zest
1/2 cup cranberry juice cocktail or orange juice or apple juice (I prefer the cranberry)

Makes about 3 cups stewed apples or applesauce. Store in refrigerator or freeze.

Place the peeled, sliced apples in crock pot. Sprinkle with spices and lemon zest. Toss gently (I use my hands). Combine lemon juice and cranberry juice, pour over apples and cook on low for 3-4 hours.

For applesauce, mash with potato masher when cooked and I leave mine really chunky.

Individual No-Bake Apple Crumble

For 1 serving
1 cup warm, stewed apples (recipe above)
1 large cookie broken into large pieces
About 2 Tbsp. cookie crumbs
Whipped topping or vanilla ice cream

Place cookie crumbles into dessert dish. Add 1 cup warm, stewed apples or chunky applesauce and top with whipped topping. Sprinkle cookie crumbs on top of whipped topping and serve.

I used bought oatmeal cookies, but you can use whatever cookies you have or like. Gingersnaps would be very good but I kinda use what I have on hand.

These are good, lowfat, low sugar, low calorie and easy. What more could you ask for?
Nuff said and good eating,
