Blueberry Orange Muffins

Good evening and come on in the house out of the cold and wind. The temperature is steadily dropping and wind is increasing in intensity and it is cold. I hate to have to get out later and go down to Hahira for the second singing of our Christmas music except that it is such a joy to sing I am looking forward to it. It is an enjoyable and joyous collection of Christmas music and fun the sing,so I will just bundle up from head to toe and go right on down.

This morning I wanted to make some special muffins using a mix and put together blueberry and orange flavors and it worked wonderfully well. I most always add a packet of oatmeal mix of some flavor or 1/3 cup quick cooking oatmealto my muffing mixes for it gives additional fiber and adds interesting texture. Instead of the oil called for in the recipe I used 1/4 cup unsalted butter which added a really nice buttery flavor. Thought you might enjoy them also so I have included the recipe.

Blueberry Orange Muffins

1 box Betty Crocker Wild Blueberry Muffin Mix
1 pkg. Apple cinnamon instant oatmeal mix or 1/3 cup oatmeal – quick cooking
2 eggs
1/4 cup melted butter
1 tsp. Orange extract
¾ cup orange juice
zest of 1 orange

Rinse and drain blueberries and set aside. In large bowl, mix muffin mix and oatmeal together. In smaller bowl, slightly beat the eggs and add orange juice, melted butter, orange zest and orange extract and mix well then add to the dry ingredients. Stir just until blended and fold in blueberries. Divide among 12 muffin cups – 1 ice cream scoop. Bake in preheated 425 degrees oven for 16- 20 minutes or until golden brown and top springs back when lightly touched.

Remove from oven, run knife blade around each muffin and carefully remove and cool on a rack.

These are delicious and great for a quick and easy breakfast. Store when cooled.

I hope you enjoy these as much as we did and they are so quick and easy. You could also bake it in a loaf pan as a loaf of blueberry orange bread.
