Freezing Fresh Fruit






FREEZING FRUIT


I drink smoothies for breakfast several mornings a week and sometimes for a snack in the afternoon in which I like to use frozen fruit.  My recipe for our smoothies and one way to freeze fruit is found in this posting "Smoothies". 

We are blessed to live in South Georgia where there is plenty of fresh fruit and vegetables.  We have peach, blueberry, and strawberry farms in our county.  You can pick the fruit or buy it picked and at my age, I buy it picked.  Fresh fruit from a farm, freezes wonderfully.  

To freeze this fresh fruit for smoothies and ice cream you begin with fresh fruit and I like to use strawberries and bananas most of the time.  As you can tell from the picture above, I buy the overripe bananas for they are sweeter and usually on sale.  When they are this ripe they also have more antioxidants.  Strawberries are usually available year around and are less expensive than most fruit.



Wash and stem the berries, let dry and slice thinly.  Place on a baking sheet lined with wax paper, parchment paper or freezer paper with waxed side up. Arrange in one layer.

 
If you have bananas, peel, slice thinly and place them on paper layered over the strawberries.

 
I have put 5 layers of fruit on a sheet then place freezer or waxed paper on the top and press lightly to adhere it to the fruit.  Place in the freezer until frozen.

Blueberries, which are rich in antioxidants, are another good fruit to freeze and use in these smoothies. I don't like to use blackberries, raspberries, or berries with lots of seeds for they tend to stick between my teeth.  

Remove the fruit from the tray with paper.  Begin crinkling the paper and the fruit will fall off into a bowl or tray then place in large freezer bag.  When frozen this way, they are in separate slices which make them easier to measure.  I usually use about a cup or cup and a half in a smoothie for 2.

I add other fruit as  they come into season.  I have  added mango chunks, blueberries,
peaches and sometimes I add cantaloupe.  You can add whatever fruit is on sale and would taste good in a smoothie.  If you find frozen fruit on sale, you can buy several kinds of fruit and mix them with your frozen fruit.  A great way to use bits and pieces of fruit.


Another way to use this fruit is to put about 2 cups of the frozen fruit in a food processor and process until smooth.  Add some yogurt, process until mixed, and you have a great soft-serve "ice cream".  This can be frozen and eaten later. 

These slices make good snacks.  The bananas are especially good but the strawberries come in a close second.

Chocolate Milk Mix and other trivia

Good evening and come on in for a visit.  As you can tell from the pictures strawberries are ready in Georgia and we have several farms in the area where we can buy them picked or pick them yourself.  At our age, letting them pick them is the way we go for after all there are some perks to getting older.

We have one farm about 25 minutes from us which has now added a new market store which is beautiful.  The new store and website can be found at http://www.rutlandfarms.com/index.html.  I like to buy my berries there for they pack them so beautifully and you surely get your money's worth.  


These 2 pictures show all the berries we got and I found 1 bad strawberry!  I froze some, sliced and frozen in muffin tin cups for our smoothies, some in bags for the freezer and I have a half gallon jar in the fridge with fresh ones to eat as snacks.  If you leave the stems on and don't wash, you can keep them in a glass jar with a tight lid for several days.  As you can tell we like strawberries and those picked fresh from the farm are so much sweeter than those you buy in the supermarkets. 

This farm also has blackberries, blueberries, peaches, pecans and vegetables plus honey from their own hives.  This year they have added pecan oil and I sure plan to get some to use in salad dressings and stir fry.  I have not used pecan oil but it sounds interesting and I will let you know how it tastes. 

On another subject, we drink smoothies most every morning and like chocolate in it.  I have been using a bought chocolate milk mix but is was getting quite expensive so I began to look for a recipe to make my own and remembered mama's chocolate milk and found one like hers.  I make ours with Splenda so it has no sugar but you can use sugar if you like.  This is the recipe and you can use it in cold chocolate milk or in smoothies.  Enjoy!!


CHOCOLATE MILK MIX
1 c. cocoa
1 c. sugar or Splenda
1/2 tsp. salt
Combine ingredients until thoroughly mixed. Put mix in jar and store for handy use. I put the ingredients in a plastic bag and shake well and store in the plastic bag or put in glass jar.
Use 2-3 tablespoons of mix with 8 ounces of cold milk for a delicious chocolate milk. To mix the chocolate into the milk put just a little milk into blender, add chocolate mixture, pulse a couple of times to combine then add the remainder of the milk. Another method is to put the chocolate in a glass, add a little milk, mix into a roux mixture and add the remainder of the milk and the little whisk that comes with hot chocolate mix does a great job of mixing. If you like, put into a jar with a tight fitting top and shake well. If you like it more “chocolately” add additional mix. This is really good and you know what ingredients are in it and costs much less than the bought mix.

I hope you will support your local farmers and find a farm with fresh fruit and vegetables and eat healthier and cheaper.  I love my farmers!!

Good evening and ya'll come on in to the 'Net Porch. I am slap dab tired and need to sit and rest a minute. I have cleaned out the cabinets under the sink, relined, threw away, and put everything back. 1 down and lots to go but will do 1 or 2 per day until I finish.

I found out several years ago that you can buy pretty wallpaper rolls on sale and this makes great shelf liner. You need to use the ones with the vinyl coating so it will be waterproof and last longer but it does a great job and you have a larger choice of patterns and colors. If it tends to roll, get some double stick tape to hold down the corners but after you put the "stuff" back it will hold it flat.

When I got ready to fix lunch/supper (lupper) yesterday I looked to see what I needed to use now. I found a bag of frozen, chicken nuggets, some boxes of Rice-A-Roni and set about to come up with a good casserole. Onions, celery, carrots and garlic are most always in my fridge and canned tomatoes are a staple in our home so out these came to join the other ingredients. Chicken, beef and vegetable stock are a necessity now that I discovered how useful they are and this house without garlic cloves is not happy.

I began to cook and combine and this recipe came into being. It is really good, inexpensive and feeds a whole passel of folks or you can freeze part of it. Let me know if you try it and what you think about it.

Chicken Nuggets and Rice Casserole

1 box Chicken flavored Rice- a-Roni
3 cups chicken broth or stock
Flavor packet
3 Tbsp. butter

Prepare the rice following the instructions on the box but substitute the broth or stock for the water. When rice is tender, remove from heat and don’t drain.

8 - 10 frozen, fried chicken nuggets (leftover fried chicken or baked chicken) about 2 cups
2 Tbsp. olive oil or vegetable oil
1 cup chopped onion
1 cup chopped celery
½ cup chopped bell pepper
¾ - 1 cup, chopped carrots
1 large garlic clove, finely minced
2 tsp. freshly grated ginger or 1 tsp. powdered ginger – fresh is really better
1 can diced tomatoes
1 Tbsp. soy sauce
Salt and pepper to taste – taste after you have combined everything

Slightly thaw the chicken nuggets and slice OR microwave for 1 min. and slice
Heat oil in large skillet and add chopped vegetables. Grate the ginger over these and sauté until tender-crisp. Add the tomatoes, soy sauce and chicken and simmer for about 3 minutes. Add the rice to the vegetables and chicken and if too dry add a little chicken stock. You don’t want it to be dry and sticky. Combine, cover and cook on low for about 3-4 minutes for the rice to absorb the flavors from the vegetable mixtures. This will feed about 8 or more people and it freezes well.

Serving suggestions:
Serve with garden salad and toasted French bread
When served, sprinkle with fresh parsley
I also thought about using shrimp instead of the chicken
For dessert we had Strawberries with Orange Sauce over vanilla ice cream with chocolate chunks in it.
Strawberries with Orange Sauce
2 pints of frozen strawberries
1 orange
1/2 cup Splenda
Place the strawberries in microwave proof bowl, zest the orange over the berries and add the juice from the orange. Microwave 5 minutes. Add the Splenda, stir, return to microwave and cook for 1 minute more.
Serve over ice cream, pound cake or eat it with whipped topping on top.
You can use fresh strawberries but cut the cooking time to about 2 min. You want the strawberries cooked but not mushy.

Hi, ya'll. Come on in for a cup of coffee on a beautiful, spring evening in South Georgia. It has been a wonderfully beautiful day down here and I am loving it. Strawberries are in season and we plan to go up to Rutland's farm up close to Tifton in the next day or two and buy fresh strawberries picked that day from their fields.

It is a great place to buy strawberries for they are fresh that day and have not been refrigerated. This makes them sweet and juicy for they only pick the ripe ones and those left and are in danger of spoiling are made into jams and jellies which you can buy. When they are picked they are packed in the green, plastic baskets but are carefully packed in alternating rows so that you get the maximum number of strawberries per basket. You surely get your money's worth there and the staff is friendly and helpful.

You can also pick your own but at my age and with my aching back, I now let the younger ones pick them for me. It would cancel out the savings of going to the farm if I have to pay the chiropractor to snap, crackle and pop my back so that I can stand erect. I will be sure and take some pictures of the fields and the farm to share with you for it is a beautifully managed farm.

If you like to fish, they have several ponds you can pay to go fishing and I have seen them catch some right nice ones up there. There are docks you can sit on or put in your boat and the children love it. School field trips to this farm are very popular.

I was in too much of a hurry to have some fresh strawberries this weekend so I bought some at a fresh produce market. They were only about five dollars a flat but had been shipped in from Louisiana and were not sweet. When you have to pick them right before they are ripe the sweetness is just not there. I did make a dessert from them and froze several packages to use in smoothies or to cook but they will have to have sugar to be sweet enough to eat.

To store strawberries, there a couple of tricks to use so that they will last longer. First, don't wash or stem them until you get ready to eat them for if you store them washed they will spoil very quickly. Secondly, store them in an airtight container in the fridge and they will last for several days. I like to use big-mouthed glass jars which I have saved. Plastic will work also but I prefer the glass peanut butter jars I save. They are easy to fill and to get out a few strawberries at the time.

This weekend I tried 2 new ways of using fresh strawberries and I wanted to share them with you for they are quick, easy and deeeelicious.

Quick and Easy Strawberry Dessert

1 pt. fresh strawberries, washed, stemmed and sliced (always wash before stemming)
1 carton strawberry yogurt (I used the low-fat Yoplait)
1/2 carton frozen whipped topping - thawed
Cinnamon

Mix the yogurt and whipped topping using a folding method until well mixed. Fold in the sliced strawberries and sprinkle lightly with cinnamon. Chill and serve with a light dusting of cinnamon on top. You want to enhance the flavors with the cinnamon not overpower so sprinkle lightly.

Garden Salad with Strawberries and Bacon

I make these as individual salads not a big bowlful

Spring salad mix
Broccoli slaw mix
Sliced strawberries
Cooked bacon slices - crumbled
Red onion thinly sliced
Feta cheese

Fill your salad bowl with salad mix. Sprinkle on some broccoli slaw mix, onion slices, bacon crumbles, and top with sliced strawberries. Sprinkle with feta cheese and serve with raspberry vinaigrette salad dressing of dressing of choice. Adding some fresh spinach would also be good.

When I cook bacon, I bake it on a rack placed over a baking sheet and bake a whole package. I store part of it in plastic bags in the fridge to use as crumbled bacon over salads or other recipes which use bacon bits. It can also be heated it in the microwave for bacon ,tomato sandwiches.

I was about to forget the other way I used them today and it was also good.

Strawberry Breakfast Smoothie

2 cups milk - slim, 2 percent or whole
1/2 cup plain or vanilla yogurt
1 cup clean strawberries
(I add 4 scoops of chocolate, protein powder)
Optional - a couple of tablespoons of chocolate syrup
Blend until smooth.


I hope you enjoy these suggestions and get out and find a local farm selling strawberries for they are so much better than those you buy in the markets. If you go to this website you can locate farms close to you for they list farms all over the US and Canada. http://www.pickyourown.org/index.htm This a website I have used several times and have not been disappointed in the results. It is also useful for all fruits and vegetables not just strawberries. This site also give great instructions for preserving your fresh fruits and vegetables and has good recipes. I had much rather have fresh than store bought even if I have to pay a little more but most of the time it is cheaper.

Get out and find farms close to you and pick your own or let them do the work but enjoy freshly picked.

That's about it for tonight and I am going to go watch the Braves get beat. They are not playing well tonight but I stick by them through win or lose. Go Braves!
